The Carpigiani masterclass by Ducasse Education took place on October 8th at the École Ducasse in Paris.
The seminar was held by Alessandro Racca, pastry chef and technical Director of Carpigiani Gelato Pastry University, as part of the partnership between the Tokyo school and Ducasse Education.
